KFC Style Chicken
Heat deep fryer to 360 F
1- 2 lbs chicken (strips, chunks or pieces)
2 cups flour divided
3 tbsp. favourite Brass Ring Seasoning (Medium or Cajun is good) divided
250 ml buttermilk (optional - season with additional BR Seasoning - it's good!)
2 cups breadcrumbs - or Brass Ring Coating Mix (you will not need 3 tbsp of Seasoning if you use our Coating Mix unless desired)
Marinate chicken in buttermilk. Place in fridge for 2 hours.
While chicken is marinating, mix 2 tbsp. Brass Ring Seasoning in flour. Place 1 1/3 cup seasoned flour in one sealable container (Ziploc bag works), and the other 2/3 in another sealable container. Into the second, container mix the breadcrumbs. If using BR Coating Mix, you will not need to mix with flour, you can just use straight BR Coating Mix in the second container.
Place 2 beaten eggs in a bowl, mix in with last tbsp. of BR Seasoning.
Remove chicken from buttermilk.
Shake to cover with seasoned flour.
Place in egg mixture.
Place in breadcrumb/flour mixture, shake to cover.
Deep fry for 5 minutes or until done.
Pat excess oil and sprinkle with your favourite BR Seasoning. Serve with your favourite dipping sauce. Enjoy!
