Taco Zucchini Boat

This one is pretty simple... the tough part is finding a large enough zucchini.

1 large zucchini - the larger the better

1 lb ground beef, pork or chicken

1/4 cup water

1 1/2 cup cheese, grated (we used marble), divided

2 tsp Brass Ring Taco Mix

Preheat oven to 375 F

Cut zucchini in half and deseed both halves. Set aside.

 

Cook meat in pan. When almost cooked, add water and wait till it simmers. Add Brass Ring Taco Mix. Stir to mix thoroughly. Simmer until water is gone and you're left with a nice saucy mixture. Let cool a few minutes so it's warm, not super hot. Once cool, add half of the cheese and mix.

Fill the zucchini boats with the taco mixture and sprinkle the rest of the cheese on top. Place the boats in a roasting pan and cover with tin foil. Bake for 25 - 30 minutes depending how thick the zucchini is. Once almost done and you can get a fork in the zucchini, but it's not mushy, remove tin foil and broil until cheese is brown. 

Serve with sour cream if desired.
