Jerk Chicken Wings

There are 2 schools of thought on this one...

option 1:

24 chicken wings, split, tips removed

2 tbsp Brass Ring Jerk Mix

1/8 cup oil

2 tbsp lime juice (approx. 1 lime)

in a large bowl combine BR Jerk Mix, oil and lime juice. Add raw chicken wings and toss in oil mixture to coat.

Refrigerate for 2 hours.

on medium heat, heat a large non stick pan (or wok). Add a little sesame seed oil, once hot add chicken wings (flip and fold occasionally) and cook until crispy and cooked on the inside - at least 12 - 15 mins. Alternatively, you can cook in the oven at 375 F for approx. 20 mins or until crispy and cooked on the inside.

option 2:

cook your chicken wings as desired, place in a large bowl and sprinkle with 1 tbsp BR Jerk Mix. Toss to coat.

I have not tried, but you could coat your cooked chicken wings very lightly with a bbq sauce and THEN sprinkle with BR Jerk Mix. The Jerk Mix will stick better, but not all sauces will pair well with the Jerk Mix - be warned.
