Jalapeno Popper Mushroom Caps

12 - 20 large mushrooms (we used crimini)

3 jalapenos, chopped fine

1/2 lb grated cheese (we used half Aged Cheddar and half Monterey Jack)

1/2 lbs bacon, chopped for bacon bits

1 227 g pkg cream cheese (we used light)

1 tsp Brass Ring Original (but if you want a kick use BR Spicy)

Preheat oven to 350 F

Cook bacon, set aside.

Wash mushrooms and remove stems.

Wash, deseed and chop jalapenos (wear gloves!)

In a bowl, mix cream cheese, bacon and jalapenos. Place mixture into open mushroom. Place in oven for approx. 15 mins. Remove from oven and top with cheese. Place back in oven for a further 5 mins. Broil if required. Easy!
