Deep Fried Chicken Wings

If you're willing to do a little bit of work, these are the BEST chicken wings you will ever taste. Follow this recipe and I guarantee your wings will be fantastic. Perfect for watching the game. If it's more work than you're willing to give, then do what you can, and they will taste accordingly. Even half the work will yield amazing results!

First, don't scimp on the wings. We buy the fresh, split, tips removed wings from Costco. Very reasonable price, but high quality. Comparable to frozen, without the pockets of fat.

Next heat deep fryer to 360 F and cook about 12 per batch for 4 - 5 minutes or until crispy. Move to bowl and pat dry. Sauce with 2 tbsp. of BBQ sauce - recipe below. Swirl, coat and put on baking sheet. Repeat until all wings are cooked in deep fryer. Once all wings are on the sheet, sprinkle with your favourite Brass Ring Seasoning - we used Medium.

Broil in oven on low until the wings are sizzling. You want all the wings to be sizzling gently and carmelizing - don't overdo it. Turn oven off. Let sit for 4 minutes or until they have stopped sizzling, broil again on low. Once sizzling gently, turn off, let sit and flip then sprinkle with your favourite BR flavour. Repeat the above steps. Return to bowl. Resauce and put back on sheet and sprinkle again with your favourite BR flavour. Repeat broiling twice each side sprinkling once flipped. That's it. All you have to do next is enjoy. Put more simply - broil each side twice, resauce, and broil each side twice. Sprinkle with your favourite BR flavour in between.

Sauce - today we used Bullseye Honey Garlic Bonanza. To that we added a shot of whisky, a bit of soy sauce, minced garlic and a generous sprinkling of BR Medium.
