2 lbs lean ground beef
2 eggs
1 cup Cranky Jimmy's Coating Mix or breadcrumbs
2 - 3 tsp Cranky Jimmy's Taco Mix
2 cups salsa, divided
1 cup shredded cheese

preheat oven to 375 F

In a large bowl, mix all ingredients including one half of salsa and one half of cheese. Once mixed, place into greased loaf pan and cover with tin foil. Place into oven and bake for 30 mins. Remove cover and drain as much water as you can. Replace cover and continue baking for 10 mins. Remove cover, add remaining salsa to top of loaf and bake uncovered for a further 10 mins. Add cheese and broil until cheese is crispy. Serve with sour cream and more salsa if desired. Have not tried, but it would be good with a green salad.

For a twist you could add crumbled tortilla chips in the meat mixture, but they may get soggy with the water in the salsa. If anyone is brave enough to try that, let us know how it is.
